I can&#8217;t believe it but I have not only a junior, but a senior as well! Where the heck has the time gone? It just doesn&#8217;t seem possible that they&#8217;re this old already. \u00a0I&#8217;m trying really hard not to blink because I&#8217;m afraid if I do, I&#8217;ll open my eyes and they&#8217;ll be married with kids of their own! As long as my eyes are open, I might as well get dinner going&#8230;.<\/p>\n<p><u>Ingredients:<\/u><br \/>\n3-4 pounds beef roast<br \/>\n1\/2 cup brown sugar<br \/>\n1\/3 cup soy sauce<br \/>\n1 head garlic (peeled, but cloves intact &#8211; about 10 cloves)<br \/>\n1\/2 onion, diced<br \/>\n1 inch fresh ginger root, peeled and grated<br \/>\n2 tablespoons seasoned rice wine vinegar<br \/>\n1 tablespoon sesame oil<br \/>\n1 whole jalapeno, diced (be careful! use gloves!)<br \/>\n*Shredded Cabbage (recipe below!)<\/p>\n<p><u>The Directions:<\/u><\/p>\n<p>Use a 6-quart slow cooker. Trim off the visible fat from your roast. Toss all of the ingredients into the crockpot. Ta da!<\/p>\n<p>Cover and cook on low for 8-10 hours or until meat has fully shredded. \u00a0Serve in soft corn or flour tortillas with shredded cabbage salad and white or brown rice.<\/p>\n<p>Shredded Cabbage:<\/p>\n<p>1 bag shredded coleslaw from the grocery store&#8217;s produce section<br \/>\n1 tablespoon soy sauce<br \/>\n2 tablespoons seasoned rice vinegar<br \/>\nsalt and pepper to taste<\/p>\n<p>Toss together and serve immediately (It wilts if you leave it sit for too long.)<\/p>\n<p><a href=\"http:\/\/s227.photobucket.com\/albums\/dd163\/kroets\/?action=view&amp;current=Name2.jpg\" target=\"_blank\" rel=\"noopener\"><img decoding=\"async\" src=\"http:\/\/i227.photobucket.com\/albums\/dd163\/kroets\/Name2.jpg\" alt=\"Photobucket\" border=\"0\" \/><\/a><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Today is the first day of school.
