The past year has been a struggle for all of us in different ways. For me, it led to me cutting back on blog posts and keeping in touch with all of you. I make no promises, but I&#8217;m trying to be back!<\/div>\n<div style=\"clear: both; text-align: left;\"><\/div>\n<div style=\"clear: both; text-align: left;\"><b><u>Fiesta Chicken Casserole<\/u><\/b><\/div>\n<div style=\"clear: both; text-align: left;\"><b><u>\u00a0<\/u><\/b><\/div>\n<div style=\"clear: both; text-align: left;\">\n<div style=\"clear: both;\"><u>Ingredients:<\/u><\/div>\n<div style=\"clear: both;\">1.5 cups raw brown rice, rinsed<\/div>\n<div style=\"clear: both;\">1\/2 cup broth<\/div>\n<div style=\"clear: both;\">1 cup prepared salsa<\/div>\n<div style=\"clear: both;\">1 (15.25-ounce) can corn (don\u2019t drain!)<\/div>\n<div style=\"clear: both;\">1 (16-ounce) can black beans, drained and rinsed<\/div>\n<div style=\"clear: both;\">3 to 4 chicken breast halves<\/div>\n<div style=\"clear: both;\">8 ounces sliced mozzarella cheese<\/div>\n<div style=\"clear: both;\"><\/div>\n<div style=\"clear: both;\"><u>Directions:<\/u><\/div>\n<div style=\"clear: both;\"><\/div>\n<div style=\"clear: both;\">Spray the inside of your stoneware. Place the rinsed rice into the bottom of your crockpot. Stir in the broth, salsa, the entire can of corn, and the drained black beans. Place the chicken breast halves on top, and then the sliced cheese.<\/div>\n<div style=\"clear: both;\"><\/div>\n<div style=\"clear: both;\">Cover and cook on low for about 7 hours, or on high for 4 hours.
