{"id":1742,"date":"2008-05-14T16:16:00","date_gmt":"2008-05-14T16:16:00","guid":{"rendered":"https:\/\/katrina.effexhost.com\/index.php\/2008\/05\/14\/mommyfest-potluck\/"},"modified":"2025-01-13T04:02:09","modified_gmt":"2025-01-13T04:02:09","slug":"mommyfest-potluck","status":"publish","type":"post","link":"https:\/\/lifewithkatie.com\/index.php\/2008\/05\/14\/mommyfest-potluck\/","title":{"rendered":"MommyFest Potluck"},"content":{"rendered":"<p><a href=\"http:\/\/mommyfest.com\/2008\/?p=24\" target=\"_Blank\"><img decoding=\"async\" src=\"http:\/\/i249.photobucket.com\/albums\/gg230\/mcowner\/potluck.jpg\" \/><\/a><\/p>\n<h3>Chicken Pesto Pockets<\/h3>\n<div>\n<div> Ingredients:<br \/>1\/2 cup light cream cheese<br \/>1\/4 cup (1 ounce) shredded parmesan cheese<br \/>2 tablespoons refrigerated pesto<br \/>1\/4 cup Italian-seasoned breadcrumbs<br \/>1\/4 teaspoon freshly ground black pepper<br \/>4 (4 ounce) skinless, boneless, chicken breast halves<br \/>Cooking Spray<\/p>\n<p>Directions:<br \/>1. Preheat oven to 400.<br \/>2. Combine first three ingredients in a small bowl; set aside.<br \/>3. Combine breadcrumbs and pepper in a shallow dish; set aside.<br \/>4. Cut a horizontal slit through thickest portion of each chicken breast half to form a pocket; divide pesto mixture evenly among pockets.  Dredge chicken in breadcrumb mixture.<br \/>5. Place chicken breasts on a foil-lined baking sheet coated with cooking spray.  Coat chicken lightly with cooking spray.  Bake at 400 for 20 to 22 minutes or until chicken is done.
