{"id":1611,"date":"2009-04-13T04:34:00","date_gmt":"2009-04-13T04:34:00","guid":{"rendered":"https:\/\/katrina.effexhost.com\/index.php\/2009\/04\/13\/recipe-share-shrimp-scampi\/"},"modified":"2025-01-13T01:11:18","modified_gmt":"2025-01-13T01:11:18","slug":"recipe-share-shrimp-scampi","status":"publish","type":"post","link":"https:\/\/lifewithkatie.com\/index.php\/2009\/04\/13\/recipe-share-shrimp-scampi\/","title":{"rendered":"Recipe Share &#8211; Shrimp Scampi"},"content":{"rendered":"<p>Ingredients:<br \/>1 tablespoon butter<br \/>1 tablespoon olive oil<br \/>3 cloves garlic, pressed<br \/>1 pound large raw shrimp, peeled and deveined<br \/>1 tomato, diced<br \/>1\/4 cup white wine (or white grape juice w\/ a splash of vinegar)<br \/>Juice of 1 lemon<br \/>Salt and Pepper to taste<br \/>1\/4 cup parsley, finely chopped<\/p>\n<p>In a skillet, heat butter and olive oil together over medium-high heat.  Add the garlic, saute for 1 minute, then add the shrimp and tomato. Saute for 1 minute, add wine, lemon juice, and salt and pepper to taste. The sauce will reduce and shrimp will turn pink &#8211; it happens very quickly. Do not overcook the shrimp or they&#8217;ll be rubbery.
